- 1 dash hot pepper sauce (such as Tabasco®)

Cook the bacon strips in a large skillet over medium-high heat, flipping them periodically until they are uniformly browned and crispy, approximately 10 minutes. Remove the cooked bacon from heat and let it cool down completely before crumbling it into smaller pieces.

Combine diced tomatoes, sliced sweet onion, granulated sugar, apple cider vinegar, salt, black pepper, and hot sauce in a medium-sized saucepan. Place the saucepan over high heat and bring the mixture to a rolling boil, stirring constantly to ensure the sugar dissolves evenly. Introduce the crumbled bacon into the saucepan and continue cooking over medium heat, stirring frequently, until the spread reaches a thick and jam-like consistency, roughly 1 hour. Season with additional salt and black pepper to taste.

Allow the spread to cool down completely before transferring it to a clean 1-pint glass jar with a lid. Store the spread in the refrigerator for up to 1 week or freeze it for up to 2 months. If freezing, divide the spread into smaller portions and let them thaw overnight in the refrigerator before using.
