Ingredients
- 1 (12 ounce) package firm tofu, frozen for 72 hours
- 2 teaspoons vegetable oil
- 1 small onion, chopped
- 1 stalk celery, chopped
- 1/4 cup shredded Cheddar cheese
- 1 large egg, beaten
- salt and pepper to taste
- 1/2 cup vegetable oil for frying, or as needed

Begin by filling a substantial saucepan with water and bringing it to a gentle boil. Retain frozen tofu in its original container and gently submerge into the boiling water. Take the saucepan off the heat source and allow the tofu to soften for approximately 20 minutes within the warm water.

Carefully remove the tofu from its package and transfer it to a serving plate. Position another plate on top of the tofu, followed by placing a substantial weight upon it. Apply pressure to the tofu for 20 to 30 minutes; discard the excess liquid that accumulates.

Meanwhile, prepare another dish by heating 2 teaspoons of oil in a compact skillet over medium heat. Introduce the onion and celery; cook until they become soft and lightly browned, taking roughly 5 minutes. Remove the skillet from the heat source.

Chop the tofu into small pieces and place them in a mixing bowl. Combine the chopped tofu with the cooked onion and celery mixture, Cheddar cheese, egg, salt, and pepper; thoroughly mix all the ingredients together.

Pour 1/4 inch of oil into a large skillet and heat it over medium-high heat. Divide the tofu mixture into six equal parts, then drop each portion into the skillet. Flatten the mixture with a spatula to form patties. Fry until golden brown, taking 5 to 7 minutes on each side
