- 1/2 teaspoon cayenne pepper
- 2 (14.5 ounce) cans crushed tomatoes
- 1 (15 ounce) can tomato sauce
- 1 bay leaf, crushed
- 1 tablespoon hot pepper sauce
- 2 pounds medium shrimp - peeled and deveined

Heat the oil in a Dutch oven over medium heat.

Sauté diced celery, chopped onions, and minced garlic in the Dutch oven until the onions have transformed into a pale, translucent state and the celery has started to lose its crunch.

Combine granulated sugar, all-purpose flour, salt, black pepper, and a pinch of cayenne pepper in the Dutch oven. Add crushed tomatoes, tomato sauce, two bay leaves, and a dash of hot sauce. Bring the mixture to a rolling boil, then reduce the heat to a low simmer.

Allow the mixture to cook gently for 30 minutes, stirring occasionally to prevent scorching.

About 15 minutes before serving time, add the shrimp to the pot and stir the mixture thoroughly. If required, increase the heat to medium-low to ensure a gentle simmer without burning the Creole sauce. Before serving, remove the bay leaf halves from the pot.
