Combine ground beef, a generous amount of sour cream, some crushed bread crumbs, an onion soup mix packet, and a few grinds of pepper in a large bowl using your hands until everything is well incorporated. Place the bowl cover on top and refrigerate for 15 minutes, allowing the flavors to meld together.

In the meantime, get your outdoor grill ready for medium heat and lightly brush some oil onto the grill grates.

Shape the beef mixture into eight uniform patties.

Cook the patties on the preheated grill for 6 to 8 minutes per side, or until they are no longer pink in the center. To ensure they're cooked to a safe temperature, insert an instant-read thermometer into the center of one of the patties and check that it reads at least 160 degrees F (70 degrees C), which is the medium level of doneness.
