Ingredients
- 1 pound pork sausage
- 1 onion, finely chopped
- 1 green bell pepper, finely chopped
- 1 teaspoon crushed red pepper flakes
- 2 tablespoons garlic, minced
- 4 tablespoons unsalted butter
- salt and pepper to taste
- 4 tablespoons all-purpose flour
- 1 teaspoon minced fresh sage
- 1 teaspoon minced fresh thyme
- 2 cups milk, divided
- 2 cubes chicken bouillon
- 1/4 cup minced fresh parsley

Heat a skillet over medium heat and sauté the pork, onion, green pepper, and red pepper flakes until the meat becomes tender and crumbly. Discard any excess fat that accumulates during cooking, but retain a small amount to add flavor later.

Combine the softened butter, salt, and pepper with the cooked meat mixture and stir until everything is well incorporated.

Gradually sprinkle flour over the top of the mixture, mixing it gently to avoid lumps. Allow the mixture to cook for 5 minutes, stirring occasionally to prevent burning. Be sure to scrape the bottom of the pan thoroughly.

Add dried sage and thyme to the mixture, stirring well to combine.

Slowly pour in milk, adding it gradually and mixing until the desired consistency is achieved. If the mixture becomes too thick, add additional milk to thin it out.

Once the gravy reaches its desired consistency, add chicken stock cube and let it cook for 5 minutes. If the mixture becomes too thick again, add more milk to balance it out. Season with salt and pepper as needed.

Just before serving, sprinkle chopped parsley over the top of the gravy. To achieve a thicker consistency, add an additional 1/4 cup of milk when serving.
