  • 2 teaspoons ground cumin
  • 1 teaspoon crushed garlic
  • 1 teaspoon ground black pepper
  • 1 (2 pound) beef tri-tip roast
  • 1 onion, cut into wedges

Combine oil, soy sauce, cumin, garlic, and pepper in a large glass or ceramic container. Mix well to create a uniform blend. Add the tri-tip and onion; stir until they are evenly coated with the mixture. Cover the container with plastic wrap and refrigerate for 2 hours, or up to 24 hours.

Heat the oven to a high temperature of 425 degrees F (220 degrees C). Take the tri-tip mixture out of the refrigerator and let it sit at room temperature while the oven is preheating.

Remove the tri-tip from its marinade and gently shake off any excess. Place it on a rack in a shallow roasting pan, making sure not to overlap the pieces. Remove the onions from their marinade and place them around the tri-tip, leaving some space between each piece. Discard any remaining marinade.

Roast the tri-tip in the preheated oven until it reaches a safe internal temperature of 135 degrees F (57 degrees C) for medium-rare or 150 degrees F (66 degrees C) for medium, taking about 30 to 45 minutes.

Once the tri-tip is cooked, let it rest for at least 15 minutes before slicing it against the grain.
