  • 1 tablespoon light soy sauce
  • 1 teaspoon brown sugar
  • 1 teaspoon finely chopped green onions
  • 1 teaspoon chopped fresh ginger root
  • 24 (3.5 inch square) wonton wrappers
  • 3 cups chicken stock
  • 2 tablespoons finely chopped green onions

Prepare the filling mixture: Combine pork, shrimp, rice wine, soy sauce, brown sugar, green onions, and ginger in a large bowl and blend until everything is fully incorporated. Allow the mixture to rest for 25 to 30 minutes.

Assemble the wontons: Place a small amount of the filling mixture onto the center of each wonton wrapper. Dampen all four edges of the wrapper with water, then fold over the filling to create a triangular shape; press the edges firmly together to seal. Bring the left and right corners together above the filling, overlapping their tips slightly, and moisten with water to secure them in place. Continue this process until all the wrappers have been filled and sealed.

Prepare the soup base: Bring chicken stock to a high temperature in a large pot, creating a rolling boil. Gently add the wontons to the boiling liquid and cook for 5 minutes.
