Ingredients
- 1 (16 ounce) package frozen French fries
- 2 tablespoons vegetable oil
- 1 pound beef tri tip, sliced 1/8 to 1/4 inch thick
- salt and pepper to taste
- 1 large onion, sliced into strips
- 3 large tomatoes, peeled, seeded, and sliced into strips
- 1 yellow chili pepper (preferably Peruvian aji amarillo)
- 1/4 cup distilled white vinegar
- 1 dash soy sauce to taste
- 2 tablespoons chopped fresh parsley

Preheat the oven to a high temperature of 425 degrees Fahrenheit (220 degrees Celsius).

Arrange the frozen French fries in a single layer on an uncoated cookie sheet, ensuring they do not come into contact with the baking surface.

Bake the French fries in the preheated oven until they reach a light golden color, requiring approximately 22 to 24 minutes of cooking time.

While the French fries are baking, heat 2 tablespoons of oil in a frying pan over an elevated heat level. Season the sliced beef with salt and pepper to taste.

Cook and stir the beef in hot oil until it is just cooked through, allowing the juices to release. Use a slotted spoon to transfer the beef to a plate for further use.

In the same pan, cook and stir the onions in the beef drippings until they become translucent, taking around 3 to 4 minutes. Introduce tomato and aji amarillo into the mixture, allowing it to cook until the tomato softens.

Pour 1-2 tablespoons of vinegar and soy sauce into the pan, mixing it with the existing ingredients.

Add the French fries and cooked beef to the pan. Cover the mixture and cook until the beef is fully cooked through, approximately 3 minutes later.

Season with salt and pepper to taste. Sprinkle chopped parsley over the dish for garnish.
