Ingredients
- 1/4 cup butter
- 2 cups fresh sliced mushrooms
- 1 tablespoon butter
- 1 tablespoon shallots, minced
- 1/2 cup chopped mushrooms
- 1/4 cup red wine
- 1/2 teaspoon dried thyme
- 1 bay leaf
- 2 cups beef broth
- 1 tablespoon arrowroot powder
- salt to taste
- freshly ground black pepper

Begin by melting 1/4 cup of butter in a medium-sized cooking vessel over medium heat. Next, introduce 2 cups of sliced mushrooms into the pan and cook until they become tender.

Remove the cooked mushrooms from the pan, then set them aside for later use.

Add another 1 tablespoon of butter to the same pan. Introduce shallots into the pan and stir them until they lose their raw appearance, becoming translucent instead.

Add ½ cup of chopped mushrooms to the pan and continue cooking until they too become soft.

Now, incorporate red wine, thyme, and bay leaf into the pan. Allow the mixture to simmer for a short period of time, until it has reduced slightly and reached your desired consistency - approximately 1 minute.

Subsequently, combine 1/4 cup of cold beef broth with the arrowroot powder. Stir this mixture into the sauce, and then bring it to a boil.

Using a whisk, combine the arrowroot mixture with the sauce and stir until it thickens.

Add the reserved mushrooms back into the pan, then season your dish to taste with salt and freshly ground black pepper.
