  • 1 (8.75 ounce) can whole kernel sweet corn, drained
  • 1 (4.5 ounce) can chopped green chiles, drained
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon minced garlic
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes
  • 6 flour tortillas
  • 2 cups shredded Cheddar cheese

Begin by preheating your oven to a high temperature of 350 degrees Fahrenheit or 175 degrees Celsius. Next, take a 9x13-inch baking dish and lightly coat it with cooking spray to prevent food from sticking.

Then, heat a large skillet over the middle to high heat on your stovetop. Cook and stir the beef and onion mixture in the hot skillet until the beef is completely browned, taking anywhere from 5 to 7 minutes. Remove and discard any excess grease.

After that, combine the tomato sauce, black beans, diced tomatoes, corn, and chopped green chiles into the ground beef mixture. Add a pinch of chili powder, cumin, garlic, oregano, and red pepper flakes to give it extra flavor. Reduce the heat to a low setting and let it simmer for 5 minutes.

Spread approximately half a cup of the beef mixture onto the bottom of your prepared baking dish. Arrange three tortillas on top, overlapping them as needed to cover the entire surface.
