Preheat a medium-sized cooking vessel over a moderate flame. Add a generous amount of olive oil to the pan and let it warm up for a minute or two. Introduce sliced onions into the pan and gently stir them until they become soft and translucent, approximately 3 minutes pass. Next, add minced garlic to the pan and stir it until it reaches a tender state, roughly 1 minute elapses.

Introduce crushed tomatoes, diced green chile peppers, and minced chipotle peppers into the pan. Bring the mixture to a gentle boil.

Now, add sliced steak, ground cumin, ground coriander, salt, and pepper to the pan. Stir everything together before bringing the mixture back to a gentle boil. Maintain a moderate heat and cover the pan with a lid; let it cook, stirring occasionally, until the steak becomes extremely tender, approximately 1 hour.

Once the cooking process is complete, remove the cinnamon stick from the pan and add chopped cilantro to it.
