- 4 white mushrooms, coarsely chopped
- 3 cloves garlic, coarsely chopped
- 2 1/2 pounds ground chuck
- 1 tablespoon Worcestershire sauce
- 1 large egg, beaten
- 1 teaspoon dried Italian herbs
- 2 teaspoons salt
- 1 teaspoon ground black pepper
- 1/2 teaspoon cayenne pepper
- 1 cup plain bread crumbs
- 2 tablespoons brown sugar
- 2 tablespoons ketchup
- 2 tablespoons Dijon mustard
- 1 teaspoon Sriracha sauce, or to taste

Gather all necessary ingredients and materials beforehand.

Preheat the oven to 325 degrees F (165 degrees C). Line a baking dish with a thin layer of lightly greased aluminum foil to prevent sticking.

Take the carrot, celery, onion, bell pepper, mushrooms, and garlic and process them in a food processor until they are finely chopped. Transfer the mixture to a large mixing bowl.

Add ground chuck, Worcestershire sauce, egg, Italian herbs, salt, black pepper, and cayenne to the bowl with the vegetables. Mix the ingredients together using a wooden spoon until they are just combined.

Sprinkle some bread crumbs into the mixture and use your fingertips to gently mix everything together until just combined. Be careful not to overmix.

Shape the mixture into a loaf, approximately 4 inches high and 6 inches wide. Place it in the prepared baking pan.

Place the meatloaf in the preheated oven and cook until it is hot, about 15 minutes.

Simultaneously, mix together brown sugar, ketchup, Dijon mustard, and Sriracha in a small bowl until the brown sugar has dissolved.

Remove the meatloaf from the oven and use the back of a spoon to spread some glaze on top of it. Then, gently pull some glaze down the sides of the meatloaf.

Return the meatloaf to the oven and continue baking until it is no longer pink inside, approximately 45-75 minutes. To check if the meatloaf is cooked, insert an instant-read thermometer into the thickest part of the loaf. The temperature should be at least 160 degrees F (70 degrees C). Start checking for doneness at 45 minutes and continue baking until the meatloaf reaches that temperature.
