Ingredients
- 1 tablespoon vegetable oil, or more as needed
- 1 3/4 pounds beef chuck, cut into 2-inch cubes
- 3 onions, quartered
- 1 tablespoon ketchup
- 1 1/2 teaspoons Worcestershire sauce
- 1 pinch cayenne pepper, or to taste
- water to cover
- 4 carrots, cut into 2-inch pieces
- 1 cube chicken bouillon
- 3 medium potatoes, cut into 3-inch chunks
- 1 1/2 (3.5 ounce) containers Japanese curry roux, or more to taste
Instructions
1
Heat a generous amount of oil in a large, six-quart cooking vessel over high heat. Introduce the beef into the pot and cook until it develops a rich brown color, taking approximately five to seven minutes. Next, add sliced onions and continue cooking until they begin to lose their crispness, roughly three minutes passing.
2
Now, incorporate ketchup and Worcestershire sauce into the mixture by stirring to coat all ingredients evenly. Add a pinch of cayenne pepper for added depth in flavor. Pour enough water into the pot to cover the mixture by at least one or two inches, taking care not to overflow. Introduce sliced carrots and a packet of bouillon into the pot as well.
3
Allow the mixture to simmer, periodically removing excess fat from the surface of the broth using a spoon. Continue cooking for thirty minutes or until the desired consistency is achieved. Add diced potatoes to the pot and stir in a pre-packaged curry roux, allowing it to dissolve fully. If desired, add any remaining curry powder to achieve the perfect thickness for your dish.
4
Finally, continue simmering until the beef and vegetables have become tender, approximately another thirty minutes.
