- 1 (23 ounce) Smithfield® Garlic & Herb Seasoned Pork Sirloin
- 2 small zucchini, sliced lengthwise and cut into 1/2-inch slices
- 1 small red onion, thinly sliced
- 8 ounces sliced fresh mushrooms
- 1/2 cup julienne sliced sun-dried tomatoes
- 1/4 cup butter
- 1 teaspoon minced garlic
- 1/2 cup grated Parmesan cheese
- 2 tablespoons chopped fresh basil

Boil a large container of water with a moderate amount of salt until it reaches a rolling boil; cook rotini in the boiling water until it's tender but still retains some firmness, approximately 8 minutes. Drain excess water.

Meanwhile, heat a significant amount of olive oil in an electric cooking device set to its highest temperature setting (400 degrees F or 200 degrees C). Sear pork in the hot oil until it develops a brown color, roughly 5 minutes.

Add sliced zucchini, chopped onion, sautéed mushrooms, diced tomatoes, melted butter, and minced garlic to the pork in the skillet; stir-fry until the vegetables are cooked through and the pork is fully cooked, around 5 minutes. Ensure that an instant-read thermometer inserted into the center of the pork registers at least 145 degrees F (60 degrees C).

Combine cooked rotini, grated Parmesan cheese, and chopped basil with the pork-vegetable mixture; toss everything together to coat.
