- 1/2 teaspoon turmeric powder
- 1 pinch salt to taste
- water as needed
- 1 (15 ounce) can chickpeas
- 1 teaspoon fresh cilantro leaves, for garnish, or more to taste

Mince the onion, tomato, ginger, garlic, and chile pepper into a fine consistency using a food processor. Combine these ingredients to form a uniform mixture.

Heat the olive oil in a large skillet over medium heat. Allow the bay leaves to infuse into the hot oil, releasing their aroma, approximately 30 seconds. Introduce the onion-tomato-ginger-garlic-chile pepper mixture into the skillet and cook until the oil starts to detach from the ingredients, transforming a deep golden hue, 2-3 minutes.

Add the chili powder, coriander, gram masala, turmeric, and salt to the mixture. Stir until the ingredients are well combined and reach a scorching temperature, 2-3 minutes.

Gradually add sufficient water to the mixture to achieve a rich gravy consistency. Bring the mixture to a boil, then incorporate chickpeas into the gravy. Lower the heat to medium and cook until the chickpeas are heated through, 5-7 minutes.
