  • 1 teaspoon ground black pepper
  • 1/2 teaspoon salt
  • 1 tablespoon vegetable oil
  • 2 medium carrots, chopped
  • 1/2 medium green bell pepper, chopped
  • 1/2 sweet onion (such as Vidalia®), chopped
  • 1 cup cooked rice, or more to taste
  • 1 tablespoon butter
  • 1 large egg, beaten

Cook ground beef, soy sauce, garlic, pepper, and salt in a large skillet over medium-high heat until it reaches a browned and crumbly state, taking approximately 5 to 7 minutes. Remove the mixture from the skillet and transfer it to a plate, allowing any excess grease to drain off.

Next, heat a generous amount of vegetable oil in the same skillet over medium heat. Add sliced carrots, diced bell pepper, and chopped onion to the skillet; cook until they are tender and easily pierced with a fork, taking around 15 to 20 minutes.

Return the ground beef back into the skillet with cooked rice; stir everything together and heat until warmed through, taking about 2 to 3 minutes.

Now, push the beef and vegetable mixture to one side of the pan. Melt butter in the empty space, then carefully pour and stir an egg into the melted butter until it's fully set, taking approximately 3 to 4 minutes.
