Savory Chinese Wontons
Ingredients
  • 2 cups shredded napa cabbage
  • 1/2 pound ground pork
  • 2 tablespoons soy sauce
  • 1 tablespoon dry sherry
  • 2 teaspoons cornstarch
  • 1 1/2 teaspoons minced fresh ginger root
  • 1 green onion, minced
  • 36 wonton wrappers
  • 1 egg white, beaten
  • 1/4 cup soy sauce
  • 1/4 cup seasoned rice vinegar
  • 2 tablespoons finely shredded fresh ginger
Instructions
1
Begin by filling a large pot with water and adding a moderate amount of salt to the water. Place the pot over high heat and bring the water to a rolling boil.
2
Then, carefully add 1-2 cups of napa cabbage to the boiling water and continue cooking until it reaches your desired level of tenderness, approximately 1 minute.
3
Next, immediately transfer the napa cabbage to a colander and submerge it in a bowl of ice-cold water for several minutes, allowing the cooking process to be halted.
4
Once the napa cabbage has cooled down, carefully drain off any excess water and transfer it to a large serving dish.
5
Then, mix together 1/2 cup of ground pork, 2 tablespoons of soy sauce, a small amount of sherry, 1 1/2 teaspoons of minced ginger, and chopped green onion in a separate bowl.
6
Arrange half of the wonton wrappers on a flat surface, covering it with a sheet of waxed paper.
7
Lightly brush each wonton wrapper with an egg white, making sure to cover the entire surface.
8
Place a generous amount of the pork mixture onto the center of each wonton wrapper, leaving a small border around the edges.
9
Fold all four corners of the wonton wrapper together and press them firmly to seal in the filling.
10
Repeat this process with the remaining wonton wrappers, making sure to seal each one properly.
11
Fill a large pot with water and bring it to a boil, then carefully drop the wontons into the boiling water.
12
When the wontons float to the surface, continue cooking them for an additional minute.
13
Remove the cooked wontons from the water with a slotted spoon and place them on a serving platter.
14
Meanwhile, prepare the dipping sauce by mixing 1/4 cup of soy sauce, seasoned rice vinegar, and 2 tablespoons of shredded fresh ginger in a separate bowl.
