- 1 andouille sausage, diced, or to taste
- 2 cups long-grain rice
- 8 ounces chicken livers, minced
- 4 cups chicken broth
- 2 teaspoons kosher salt, or to taste
- 1 large bay leaf
- 1 dash Worcestershire sauce
- 1/4 cup sliced green onions
- 1/4 cup chopped Italian parsley

Gather all the necessary ingredients beforehand.

Heat a significant amount of oil in a deep, wide pan over a medium-high heat setting. Place the pork inside and cook constantly until it's nicely browned on all sides and the excess fat has been released, taking around 5 to 7 minutes.

Next, add sliced onions, chopped celery, and diced bell peppers into the pan. Continue to stir them until they become translucent in color, which should take about 5 minutes.

Now, add a blend of spices including paprika, cumin, black pepper, cayenne, garlic powder, oregano, and thyme. Stir these ingredients occasionally as the vegetables continue to soften in the pan, taking around 5 minutes.

Subsequently, decrease the heat to a medium setting and add sliced andouille sausage into the pan. Cook constantly for 2 to 3 minutes, allowing it to release some of its flavors.

Add chopped green onions and parsley into the pan. Mix them well with the other ingredients. Cover the pan again and continue cooking over low to medium-low heat until the rice is tender, taking around 10 minutes.
