  • 1 (16 ounce) package frozen hash brown potatoes
  • 1 cup diced cooked ham
  • 1 tablespoon vegetable oil
  • 1 (4.5 ounce) can diced green chile peppers
  • 1 1/2 cups shredded Cheddar cheese, divided
  • 1 (28 ounce) can green chile enchilada sauce
  • 8 (10 inch) flour tortillas

Preheat your oven to a high temperature of 375 degrees Fahrenheit, or 190 degrees Celsius.

Brown the hash browns and diced ham in a small amount of oil, heated to high heat, in a medium-sized skillet. Stir in the diced green chilies and 1/2 cup of Cheddar cheese, then continue to cook until the cheese has melted.

Apply a thin layer of enchilada sauce to the base of a 9x13 inch baking dish. Dip each tortilla into the remaining sauce and fill it with the potato-ham mixture, rolling each one tightly to secure.

Place the rolled tortillas seam-side down in the prepared baking dish, followed by a layer of remaining sauce and cheese. Cover the top with tin foil to prevent overcooking.

Bake the dish, covered, in your preheated oven for around 20 minutes. Remove the foil and continue baking for an additional 10 minutes, or until a light brown color is visible on top.
