  • 8 (10 inch) flour tortillas
  • 8 ounces Cheddar cheese, shredded
  • 1 teaspoon all-purpose flour
  • 1 cup milk

Begin by placing the sausage in a large and deep skillet, cooking it over medium-high heat until it is uniformly browned. Set the cooked sausage aside and reserve 2 tablespoons of its juices for later use. Preheat your oven to a temperature of 350 degrees Fahrenheit (175 degrees Celsius).

Next, add the eggs and green chiles to the same skillet used for cooking the sausage. Continue to cook, stirring occasionally, until the eggs are fully scrambled and set.

Now, lightly grease a 9x13 inch baking pan to prevent the tortillas from sticking. Place the tortillas on a clean surface, such as a countertop, and cover each one with portions of sausage, cheese, and eggs. Roll up the tortillas and place them seam-side down in the prepared baking dish.

Return the skillet used for cooking the sausage to medium heat. Heat up the reserved 2 tablespoons of sausage drippings in the skillet, then sprinkle some flour into it and stir.
