Savory Bourbon-Infused Chicken
Ingredients
  • 4 tablespoons olive oil
  • 3 pounds skinless, boneless chicken breast halves - cut into 1 inch pieces
  • 1 cup water
  • 1 cup packed light brown sugar
  • 3/4 cup apple-grape-cherry juice
  • 2/3 cup soy sauce
  • 1/4 cup ketchup
  • 1/4 cup peach-flavored bourbon liqueur (such as Southern Comfort ®)
  • 2 tablespoons apple cider vinegar
  • 2 cloves garlic, minced
  • 1 tablespoon dried minced onion
  • 3/4 teaspoon crushed red pepper flakes, or to taste
  • 1/2 teaspoon ground ginger
  • 1/4 cup apple-grape-cherry juice
  • 2 tablespoons cornstarch
Instructions
1
Preheat your cooking vessel by heating oil in a Dutch oven or large, heavy pan over medium-high heat. Sear the chicken pieces until they are lightly golden on all sides, taking around 10 minutes to achieve this. Transfer the chicken to a separate container and set it aside for now.
2
Next, combine water, brown sugar, 3/4 cup of fruit juice, soy sauce, ketchup, bourbon liqueur, vinegar, garlic, onion, red pepper flakes, and ginger in the Dutch oven. Stir everything together until it forms a smooth mixture. Bring this sauce to a rolling boil while scraping the browned bits from the bottom of the pot using a wooden spoon! Now, add the chicken back into the sauce and stir it in thoroughly. Continue to cook the mixture over medium-high heat until it reaches a full boil. Once you've achieved this, reduce the heat to a lower setting and let it simmer for about 20 minutes or until the sauce has thickened, and the chicken pieces are no longer pink in the middle.
3
Remove the cooked chicken from the sauce using a slotted spoon and transfer it to a separate container. In another small bowl, whisk together 1/4 cup of fruit juice with cornstarch until it forms a smooth paste. Add this mixture to the sauce and whisk constantly to avoid any lumps forming.
4
Finally, return the chicken pieces back into the sauce and stir everything together until it's well combined.
