Savory Beef and Onion Blinis

  • 2 cups milk
  • 1 cup all-purpose flour
  • 3 tablespoons all-purpose flour
  • 2 eggs
  • 1 tablespoon white sugar
  • 1/4 cup melted butter
  • 3/4 pound beef stew meat
  • 2 tablespoons butter
  • 2 onions, diced
  • salt and ground black pepper to taste
  • 1 teaspoon vegetable oil

Combine milk, 1 cup plus 3 tablespoons of flour, eggs, and sugar in a bowl. Whisk the ingredients until they are fully incorporated. Add 1/4 cup of melted butter and mix thoroughly. Allow the mixture to rest for 15 to 20 minutes, permitting it to thicken and become more cohesive.

Heat a pot of water to its boiling point. Add the beef and cook until it is no longer pink, taking around 5 to 7 minutes. Drain the cooked beef and chop it into small pieces until they are evenly textured.

Melt 2 tablespoons of butter in a skillet over medium-low heat. Add the onion and cook, stirring constantly, until it is soft and golden brown, approximately 10 minutes. Increase the heat to medium and add the chopped beef, salt, and pepper to the skillet. Cook for an additional 10 minutes, stirring frequently, until the flavors have melded together.

Heat some oil in a non-stick or cast-iron skillet over medium heat. Pour 3 to 4 tablespoons of the batter into the skillet and quickly rotate it to spread the batter evenly in a thin layer. Cook for 1 to 2 minutes, or until the edges are browned.

Use a spatula to loosen the blini from the skillet, then flip it over and cook for an additional 1 minute, or until the other side is light brown. Repeat this process with the remaining batter.

Spread 2 tablespoons of beef filling onto one side of each blini. Fold the edges over the filling and roll the blini up into a tight cylinder. Repeat this process with the remaining filling and blini.
