- 2 cloves garlic, chopped
- 14 ounces fresh mushrooms, sliced
- 10 ounces clean fresh spinach, roughly chopped
- 2 tablespoons balsamic vinegar
- 1/2 cup white wine
- salt and freshly ground black pepper to taste
- chopped fresh parsley, for garnish

Preheat a large skillet over medium-high heat, allowing the olive oil to warm up. Sear the onion and garlic in the hot oil until they become soft and translucent. Next, add the mushrooms to the skillet and cook them until they start to lose their shape, approximately 3-4 minutes.

Introduce the spinach into the skillet and stir constantly to ensure it cooks evenly, just a few minutes should be sufficient for the spinach to wilt.

Add a splash of vinegar and stir constantly until it is fully incorporated into the mixture, then pour in some white wine. Gradually decrease the heat to a low setting and let it simmer for a while, allowing most of the wine to evaporate.
