- 1 green bell pepper, seeded and chopped
- 1 red bell pepper, seeded and chopped
- 1 yellow bell pepper, seeded and chopped
- 2 cloves garlic, crushed
- 3/4 cup uncooked quinoa
- 4 cups vegetable broth or stock
- 1 tablespoon tomato puree
- 3 tomatoes - peeled, seeded and chopped
- Italian seasoning to taste

Preheat the skillet by heating the oil over a moderately high heat level. Introduce the sliced onions and a medley of colorful peppers - red, green, and yellow - into the skillet. Engage in a gentle stirring motion for approximately 5 minutes, allowing these vegetables to soften and blend together. Introduce the minced garlic into the skillet and continue cooking for an additional 2 minutes, stirring constantly. Combine the quinoa with a generous amount of vegetable stock and tomato puree in the skillet, stirring to distribute evenly. Bring the mixture back to a rolling boil before covering it with a lid and simmering over low heat for 20 minutes, or until the quinoa grains have become tender. Stir in the diced tomatoes and add a pinch of Italian seasoning to taste, allowing the flavors to meld together. Continue cooking until heated through before presenting the dish.
