Ingredients
  • 1/4 cup pine nuts
  • 1 tablespoon olive oil
  • 1 onion, thinly sliced
  • 1 clove garlic, minced
  • 1 pound baby kale
  • salt and ground black pepper to taste
  • 1/4 cup golden raisins

Heat a skillet over medium-high heat and add pine nuts, which should be placed in the pan. Cook them constantly with stirring until they turn toasted and fragrant, approximately 2 minutes.

Next, heat a generous amount of oil in a large skillet over medium heat. Add an onion to the pan and cook, stirring frequently, until it starts to develop a golden brown color, roughly 5 minutes. Introduce garlic into the mix and cook for about 1 minute while stirring constantly. Gradually add handfuls of baby kale to the pan, stirring continuously until it begins to soften and wilt. Cover the skillet and cook for 3-4 minutes, or until the kale is completely tender and hot. Season with salt and pepper to taste.

Remove the skillet from heat and stir in toasted pine nuts and golden raisins. Allow the mixture to cool slightly, approximately 5 minutes, before serving.
