Sausage Stuffed Tomatoes

  • 2 large ripe tomatoes
  • 1 (10 ounce) can diced tomatoes with green chile peppers, partially drained
  • 1/2 cup dry bread crumbs
  • 2/3 cup shredded Cheddar cheese, divided
  • 1/4 pound smoked sausage, cut into 1 inch pieces

First, preheat your oven to a high temperature of 400 degrees Fahrenheit or 200 degrees Celsius.

Next, carefully remove the tops from the tomatoes and use a sharp knife to cut around the inside of each one, releasing the tender flesh from its skin. Gently scoop out the soft, juicy interior of each tomato.

Then, place the hollowed-out tomatoes in a small baking dish to prepare them for cooking.

Combine the canned tomatoes with some crusty bread crumbs and a generous amount of 1/3 cup of melted cheese in a small bowl. Add some savory sausage to the mixture and stir until everything is well combined.

After that, spoon the meaty mixture into each of the tomato skins, topping them off with a generous helping of the remaining 1/3 cup of cheese.

Finally, pop the baking dish into your preheated oven and let it cook until the tomatoes are warmed through and the cheese has melted, taking around 15 minutes to achieve perfection.
