  • salt and ground black pepper to taste
  • 5 poblano peppers, halved
  • 1 (8 ounce) package cream cheese
  • 1/2 (8 ounce) package shredded pepper Jack cheese

First, preheat your oven to the optimal temperature for baking, which is 350 degrees Fahrenheit or 175 degrees Celsius.

Next, heat a large skillet over the medium-high heat setting until it reaches a scorching hot state. Then, cook and stir the sausage, fennel, sage, salt, and pepper in the skillet until it reaches a nicely browned and crumbly consistency, taking around 5 to 7 minutes.

Now, position the poblano peppers cut-side up in a baking dish. Subsequently, spread approximately 3/4 ounce of cream cheese into each pepper. Fill the peppers with the sausage mixture and sprinkle with pepper Jack cheese.
