- 2 cups chopped onions
- 2 cups sliced fresh mushrooms
- 4 cloves garlic, minced
- 4 cups chicken broth
- 1 (15 ounce) can tomato sauce
- 1 (14.5 ounce) can Italian-seasoned diced tomatoes
- 1 cup uncooked mafalda pasta
- 2 cups chopped fresh spinach
- 1 cup shredded mozzarella cheese
- 1/4 cup Parmesan cheese
- 4 teaspoons thinly sliced fresh basil

Heat the sausage in a large cooking vessel over medium-high heat, constantly moving it until it reaches a dark brown color, approximately 5 minutes. Add the sliced onions, chopped mushrooms, and minced garlic to the pot and mix well.

Next, add the chicken broth, tomato sauce, and diced tomatoes to the mixture. Bring the entire contents of the pot to a rolling boil.

Add the pasta to the boiling soup and stir occasionally as it cooks until almost fully tender, around 10 minutes.

Add the fresh spinach leaves, shredded mozzarella cheese, and grated Parmesan cheese to the pot. Remove from heat immediately.

Stir in some chopped basil leaves and let the soup sit for an additional 2 minutes, allowing the pasta to become fully tender.
