Sausage Fried Rice
Ingredients
  • 1 pound ground pork sausage
  • 5 eggs, beaten
  • 3 tablespoons vegetable oil
  • 1/2 head cabbage, cored and shredded
  • 3 carrots, chopped
  • 6 cups cooked white rice, cold
  • 1/4 cup soy sauce, or to taste
  • 1 (14.5 ounce) can bean sprouts, drained
  • 1 (6 ounce) package frozen green peas, thawed
  • ground black pepper to taste
  • 3 green onions, chopped

Heat a large skillet over high heat, adding oil to the pan. Sear the sausage until it's nicely browned on all sides, then carefully lift it out of the pan with a slotted spoon. Reserve the sausage for later use.\nIn the same skillet, continue to cook over high heat, adding more oil if necessary. Stir constantly until the eggs are cooked through and fluffy, breaking them up into small pieces as they cook. Set the egg mixture aside for now.

Now, heat a large skillet over high heat and add plenty of oil to the pan. Quickly sauté the cabbage and carrots until they've just started to soften, then add the rice to the pan. Stir constantly to prevent clumps from forming as you cook the rice with the cabbage mixture. Add the cooked sausage back into the pan, along with some soy sauce to taste. Stir in the bean sprouts and peas before finally adding the cooked eggs, mixing everything together until it's well combined. Season with pepper to taste, then garnish the dish with green onions just before removing it from the heat.
