  • 1 cup chopped carrots
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • 1 cup tomato sauce
  • 1 zucchini, chopped
  • 8 ounces cheese tortellini
  • 1 green bell pepper, chopped
  • 1 tablespoon chopped fresh parsley
  • 2 tablespoons grated Parmesan cheese for topping

Begin by placing the sausage in a large cooking vessel over medium-high heat, stirring occasionally. Allow it to cook for 10 minutes, or until it is nicely browned on all sides. Remove excess fat from the pot, leaving about 1 tablespoon behind, then add sliced onions and minced garlic. Continue to cook for an additional 5 minutes.

Next, introduce the beef stock, water, wine, canned tomatoes, sliced carrots, dried basil, oregano, and tomato sauce into the pot. Bring the mixture to a rolling boil, then decrease the heat to a low simmer and let it cook for 30 minutes, periodically removing any excess fat that may rise to the surface.

Add sliced zucchini, cooked tortellini, diced green bell pepper, and chopped parsley to taste. Allow the mixture to simmer for 10 minutes, or until the tortellini is fully cooked and tender. Finally, divide the pasta mixture among individual serving bowls and top with grated cheese.
