Sausage and Spinach Phyllo Triangles
Ingredients
  • 1 (16 ounce) package Jimmy DeanĀ® Premium Pork Regular Sausage
  • 1 (10 ounce) box frozen chopped spinach
  • 1 bunch green onions, chopped
  • 1 teaspoon red pepper flakes
  • 5 ounces ricotta cheese
  • 4 ounces feta cheese, crumbled
  • salt and ground black pepper to taste
  • 16 sheets phyllo dough, thawed
  • 1 cup unsalted butter, melted

Preheat your oven to a hot temperature of 375 degrees Fahrenheit (or 190 degrees Celsius, if you prefer metric).

Next, prepare a baking sheet by lining it with parchment paper to prevent sticking.

In a large skillet, heat some oil over high heat and add the sausage. Stir constantly with a spatula until it's fully cooked, breaking it apart into smaller pieces in the process. This should take around 5 to 7 minutes.

To reduce heat, switch to medium and add the spinach, green onions, and a pinch of red pepper flakes. Continue cooking until the spinach is thawed, which should take another 3 to 5 minutes.

Turn off the heat and mix in some ricotta cheese and crumbled feta. Add a pinch of salt and pepper to taste.

Unroll the phyllo dough and cover it with a cloth to keep it from drying out.

Working one sheet at a time, apply some melted butter to half of the dough and fold it in half lengthwise. Place a small amount of filling, about 1/4 to 1/2 cup, in the top-left corner. Fold the bottom-left corner over into a triangle shape and continue folding edge by edge until you reach the end of the dough, forming another triangle. Place this triangle on a baking sheet. Repeat with the remaining ingredients.

Give all the triangles a good coating of melted butter before baking.

Bake these delicious pastries in your preheated oven until they're golden brown, which should take around 25 minutes.
