- 5 cups shredded mozzarella cheese
- 1 (10 ounce) package frozen chopped spinach, thawed and squeezed dry
- 3/4 cup ricotta cheese
- 1/2 teaspoon salt
- 1/8 teaspoon garlic powder
- 1/8 teaspoon ground black pepper
- 1 (14.1 ounce) package double-crust pie pastry, thawed
- 1 tablespoon water

Preheat your oven to a high temperature of 375 degrees Fahrenheit (or 190 degrees Celsius, if you prefer metric).

Next, heat a substantial skillet over an elevated heat setting and introduce the sausage. Stir constantly until the sausage is broken down, uniformly browned, and no longer holds its pink hue, approximately 10 minutes. Discard any excess fat.

Set one egg apart from the rest and reserve its yolk; whisk together the remaining eggs and egg white in a bowl. Combine mozzarella cheese, spinach, ricotta cheese, salt, garlic powder, pepper, and the cooked sausage into the egg mixture.

Cover a 10-inch pie plate with a layer of bottom pastry; pour the filling into the crust. Roll out the remaining pastry to fit the top of the pie and place it over the filling. Trim, seal, and flute the edges; make shallow cuts in the pastry to allow steam to escape. In a small bowl, whisk together water and the remaining egg yolk; brush this mixture over the top of the pie.

Place the pie in the preheated oven and bake until the pastry is golden brown and the filling is bubbly, spanning 50 to 60 minutes. Allow it to rest for 10 minutes before slicing.
