  • 1 pound bulk Italian sausage
  • 1/4 cup diced onion
  • 4 cups spaghetti sauce
  • 2 cups cottage cheese
  • 2 cups mozzarella cheese, divided
  • 1/4 cup freshly grated Parmesan cheese
  • 2 large eggs, beaten
  • 1 tablespoon dried parsley
  • 1/2 teaspoon Italian seasoning
  • 1/2 teaspoon dried basil
  • salt and ground black pepper to taste

Preheat your oven to a high temperature of 350 degrees Fahrenheit (175 degrees Celsius).

Next, take some cooking spray and lightly coat a large baking dish to prevent food from sticking.

Fill a massive pot with water and add a pinch of salt, bringing it to a rolling boil.

Cook the rigatoni pasta in the boiling water for 12 minutes, stirring occasionally to ensure it's cooked just right - still a bit firm in the middle.

Drain the pasta and set it aside for now, waiting for its turn to shine.

While the pasta is cooking, heat up a large skillet over medium-high heat and cook the sausage and onion until the sausage is no longer pink and the onion is translucent, taking around 5 to 7 minutes.

In a separate bowl, combine spaghetti sauce, cottage cheese, 1 cup of shredded mozzarella cheese, Parmesan cheese, eggs, parsley, Italian seasoning, basil, salt, and black pepper.
