Sausage and Ricotta Stuffed Mushrooms
Ingredients
  • 1 (9.6 ounce) package Jimmy DeanĀ® Original Hearty Pork Sausage Crumbles
  • 2 cups shredded Italian cheese blend, divided
  • 1/2 cup ricotta cheese
  • 2 green onions, thinly sliced
  • 3 tablespoons finely chopped sun-dried tomatoes, rehydrated
  • 12 medium portobello mushroom caps
  • 2 tablespoons olive oil
  • 3 tablespoons balsamic vinegar

Heat the oven to its highest temperature setting, 350 degrees F.

In a large mixing container, merge sausage, shredded cheese, ricotta cheese, onions and tomatoes together.

Coat the mushroom caps with a thin layer of oil; position them, with their flat sides facing downwards, in a shallow baking dish.

Cover the mushroom caps with the sausage mixture. If you wish to add an extra layer of flavor, drizzle a small amount of vinegar over the top. Finish by sprinkling any remaining shredded cheese over the mixture.

Bake for 10-12 minutes, or until the mushrooms are tender.
