- 2 cups cubed cooked red potatoes
- 8 eggs
- 1/4 cup grated Parmesan cheese
- 1/4 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1/2 cup chopped seeded tomato
- 2 green onions, thinly sliced

Heat a large nonstick skillet over medium heat, allowing the sausage to warm through and reach an internal temperature of 160°F (71°C), approximately 4-5 minutes. Introduce diced potatoes into the skillet and stir gently to combine.

Combine beaten eggs, shredded cheese, salt, and pepper in a large bowl using a wire whisk; then pour the egg mixture over the sausage and potato mixture in the skillet. Cook over medium-high heat for 2 minutes, periodically lifting the edge of the mixture with a spatula and tilting the skillet to facilitate the uncooked egg flowing underneath. Resist stirring the mixture during this time.

Lower the heat to medium-low and cover the skillet, allowing the eggs to cook through until they reach a solid state, typically 14-17 minutes.
