Sausage and Peppers Tortellini
Ingredients
  • 12 ounces sweet Italian sausage links
  • 1 cup water
  • 1 tablespoon olive oil
  • 1 cup chopped onion
  • 2 cloves garlic, minced
  • 1 (28 ounce) can crushed tomatoes
  • 1/4 cup tomato paste
  • 1/4 cup dry red wine
  • 1 teaspoon dried oregano
  • 1/4 teaspoon crushed red pepper
  • 2 tablespoons chopped fresh parsley
  • 1 green bell pepper, diced
  • 1 (16 ounce) package fresh tortellini

Combine sausage links with water in a large skillet and heat it up to a rolling boil, taking about 5 minutes.

Cover the skillet, lower the heat and let it simmer until the juices run clear, approximately 15 minutes.

Get rid of the excess water and cook the sausage links in the skillet, stirring constantly, until they turn a nice brown color, taking about 2 to 4 minutes more.

Take the cooked sausage links out of the skillet, let them cool down and then cut them into 1/2-inch diagonal slices.

Clean the skillet using a paper towel to get rid of any remaining residue.

Put the skillet over medium heat and add some olive oil.

Add an onion to the hot oil and cook until it's tender but not burnt, taking about 3 to 5 minutes.

Add some garlic to the hot oil and cook until it's fragrant, about 30 seconds.

Stir in some tomatoes, tomato paste, wine, oregano, and red pepper into the skillet.

Add the cooked sausage links and some bell pepper to the skillet.

Heat it up again, bringing everything to a boil, taking about 5 minutes.

Lower the heat and cover the skillet. Let it simmer until it reaches your desired thickness, approximately 20 minutes.

Meanwhile, bring 4 quarts of water to a boil in a saucepan, taking about 5 minutes.

Add some tortellini to the boiling water and reduce the heat slightly, letting it boil until the pasta is tender but still firm to the bite, taking about 5 to 10 minutes.

Drain the pasta and return it to the warm saucepan.

Stir some parsley into the sausage mixture, pour it over the pasta and serve it immediately.
