- 1 large red onion, chopped
- 1 red bell pepper, cut into 1 1/2-inch chunks
- 1 green bell pepper, cut into 1 1/2-inch chunks
- 3 cloves garlic, minced
- 1/2 teaspoon crushed red pepper, or more to taste
- salt and ground black pepper to taste

Preheat a large skillet over medium-high heat and add 1 tablespoon of olive oil. Allow the turkey sausages to sear until they develop a nice brown color and become firmer, typically taking 3-4 minutes on each side. Transfer the sausages to a plate and let them rest for a short while before slicing into 1/2-inch thick diagonal pieces; they will not be fully cooked at this stage.

Next, heat the remaining 1 tablespoon of oil in the same skillet over high heat. Stir-fry the onion quickly until it starts to develop a rich brown color, approximately 1 minute. Add the peppers and continue cooking over high heat, stirring constantly, until they start to brown as well, taking around 2-3 minutes. To achieve the best results, cook the vegetables in batches to prevent overcrowding and allow for a nice caramelized crust.

Add minced garlic to the skillet and cook for 1 minute, allowing its flavors to meld with the vegetables.

Return the cooked sausages and any accumulated juices to the skillet. Season with crushed red pepper, salt, and black pepper, then reduce the heat to medium. Stir everything together and continue cooking until the sausage reaches a safe internal temperature, typically taking an additional 2 minutes.
