  • 4 ounces portobello mushrooms, coarsely chopped
  • 2 shallots, minced
  • 2 tablespoons butter
  • 1 tablespoon oil
  • 2 cloves garlic, minced
  • 1/2 cup dry white wine (such as Pinot Grigio)
  • 1 (18 ounce) package potato gnocchi
  • 1 1/2 cups heavy cream
  • 1/2 teaspoon Italian herbs (such as cantanzaro herbs from Savory Spice Shop®)
  • 1 pinch red pepper flakes, or to taste
  • salt and ground black pepper to taste

Preheat a large cooking vessel over high heat. Sear the sausage in the hot pan until it becomes crumbly and loses its pink hue, approximately 7 minutes. Combine the sausage with sliced mushrooms, minced shallots, melted butter, and oil; cook, stirring occasionally, until the mushrooms and shallots have softened and started to develop a golden color, roughly 5 minutes. Introduce minced garlic into the mixture and cook for 1 to 2 minutes. Pour in white wine and let it simmer until the liquid has reduced by half, approximately 5 minutes.

Concurrently, bring a large container of salted water to a rolling boil. Cook the gnocchi in boiling water until it rises to the surface, 2 to 4 minutes. Drain.

Combine the cooked gnocchi with a rich cream sauce, featuring Italian herbs, pepper flakes, salt, and a generous amount of black pepper. Cook over low heat until the sauce has thickened to your liking, approximately 10 minutes.
