  • 1 pound mild Italian pork sausage, casing removed
  • 1 (16 ounce) package dry mini potato gnocchi
  • 2 1/2 cups no-salt-added diced tomatoes, undrained
  • 1/2 teaspoon salt
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon ground oregano
  • 1/4 teaspoon ground black pepper
  • 5 ounces baby spinach
  • 1 pinch freshly grated nutmeg
  • 1 cup shredded fresh mozzarella cheese
  • 1/2 cup freshly shredded Parmesan cheese

Heat a generous amount of avocado oil in a substantial, non-stick cooking vessel over a moderately high heat setting. Introduce the onion into the pan and cook until it becomes tender, taking approximately 3 to 4 minutes. Next, add the garlic and cook just until its aroma becomes apparent, roughly 30 seconds. Then, introduce the sausage; use a spoon to break up the meat and cook until it is nicely browned, requiring 5 to 7 minutes.

Remove any excess oil from the pan and retain the meat mixture in it. Add the gnocchi, stirring to eliminate any clumps that may have formed. Introduce the tomatoes, salt, basil, oregano, and pepper into the pan; stir everything together. Cover the pan and let it simmer for 5 minutes.

Stir in some fresh spinach and add a pinch of nutmeg; continue to simmer until the spinach has wilted, which should take 3 to 5 minutes. Finally, sprinkle some mozzarella and Parmesan cheese on top of the mixture; cover it again and let the cheese melt, which should take 2 to 3 minutes. Serve hot immediately
