Ingredients
- 1/2 pound ground pork sausage
- 12 large eggs, beaten
- 1 small onion, chopped
- 1/2 (4 ounce) can chopped green chile peppers, drained
- 1 teaspoon garlic powder
- salt and pepper to taste
Instructions
1
Firstly, preheat your oven to a high temperature of 350 degrees Fahrenheit (or the equivalent temperature of 175 degrees Celsius, if your oven uses metric measurements). Next, lightly coat a 12-cup muffin tin with a thin layer of oil or cooking spray to prevent the baked goods from sticking.
2
Then, cook sliced sausage in a large skillet over high heat until it reaches a dark brown color and has broken down into small, crumbly pieces, taking around 5 to 7 minutes. Remove the cooked sausage from the skillet using a slotted spoon and drain off any excess fat.
3
After that, combine eggs, finely chopped onion, and diced chile peppers in a large mixing bowl. Add the cooked sausage, salt, and pepper to the bowl; mix everything together until you have a smooth and well-combined mixture. Divide the sausage mixture evenly among the prepared muffin cups, filling each one with about 1/4 cup of the mixture.
4
Finally, place the muffin tin in the preheated oven and bake until the eggs are fully cooked and a toothpick inserted into the center of each muffin comes out clean, taking around 15 to 20 minutes.
