Ingredients
- 2 tablespoons all-purpose flour
- 1 tablespoon vegetable oil
- 1 cup frozen chopped onions
- 1 cup frozen green bell peppers
- 1 cup frozen cut okra
- 1 cup chopped celery
- 2 teaspoons garlic, minced
- 1 teaspoon Creole seasoning, or to taste
- 1/2 teaspoon dried thyme
- 1/2 teaspoon cayenne pepper, or to taste
- 1/2 teaspoon salt, or to taste
- 1/2 teaspoon ground black pepper, or to taste
- 1 (3.5 ounce) bag boil-in-bag rice
- 2 cups chopped roasted chicken
- 8 ounces kielbasa sausage, cut into 1-inch pieces
- 1 (14.5 ounce) can diced tomatoes with green peppers and onions
- 1 (14.5 ounce) can chicken broth
Instructions
1
Combine the dry ingredient, flour, and a liquid oil in a large cooking vessel over medium-high heat. Stir constantly to form a smooth, thick paste that resembles cake frosting. Continue cooking and stirring rapidly until the powder turns a deep golden color, approximately 15 to 20 minutes. The darker the mixture becomes, the richer its flavor will be; however, avoid burning it.
2
Add a variety of vegetables including onions, bell peppers, okra, celery, garlic, and seasonings such as Creole seasoning, thyme, cayenne, salt, and pepper to the pot. Cook until these vegetables are tender, taking around 3 to 6 minutes.
3
Meanwhile, bring a large quantity of water to a boil in a smaller saucepan. Introduce an unopened container of rice and continue boiling until the grains are tender, typically 10 to 12 minutes. Remove the container from the water and drain excess liquid. Open the bag, pour the cooked rice into a separate bowl, and use a fork to separate the grains.
4
Combine chicken, kielbasa, diced tomatoes, and broth in the cooked vegetables. Continue cooking until everything is thoroughly heated through, approximately 10 minutes. Serve this savory dish over warm rice.
