- 7 baking potatoes, peeled and cubed

- 1 teaspoon ground black pepper
- 2 teaspoons white sugar
- 1 teaspoon minced garlic
- 2 eggs
- 1/2 cup vegetable oil
- 1 cup warm water
- 1 teaspoon salt
- 4 cups all-purpose flour
- 2 egg yolks
- 2 tablespoons milk

Start by submerging potatoes into a large container filled with salted water. Place the pot over high heat and bring to a boil, then gradually decrease the heat to medium-low and let it simmer until potatoes are tender, approximately 20 minutes. Remove from heat and allow to sit for a minute or two.

In the meantime, warm 1/4 cup of vegetable oil in a skillet over medium heat. Add an onion and cook, stirring occasionally, until it has softened and turned a pale color, roughly 5 minutes.

Combine cooked potatoes with the onion in a large bowl; season with 2 teaspoons of salt, pepper, sugar, and garlic. Use a masher or spoon to mash the mixture until it's smooth; set aside.

Preheat your oven to 375 degrees F (190 degrees C). Line a baking sheet with parchment paper for easy cleanup.

In another bowl, whisk together 2 eggs, 1/2 cup of vegetable oil, warm water, and 1 teaspoon of salt until well combined. Gradually add flour to the mixture, stirring until it forms a cohesive dough. Turn the dough out onto a lightly floured surface and knead for about 8 minutes, until it becomes smooth and elastic. Divide the dough into thirds and roll each piece out to a size of about 9x13-inches. Slice the dough in half lengthwise, then place a portion of the potato mixture down the center of each strip. Roll each strip around the filling and gently press to seal. Repeat with the remaining dough and filling, ending up with six logs.

Cut each log into 1-inch slices and place cut-side down on the prepared baking sheet. Use your fingers to press the edges of the dough toward the center of the potato mixture, forming a bun. In a small bowl, whisk together egg yolks and milk until well combined. Brush each knish with the egg yolk mixture.

Bake in the preheated oven until golden brown, taking about 35 to 45 minutes.
