Santa Maria Tri-Tip Roast
Ingredients
  • 1 tablespoon kosher salt
  • 1 tablespoon finely ground black pepper
  • 1 tablespoon granulated garlic
  • 1 tablespoon onion powder
  • 1 tablespoon dried oregano
  • 1 teaspoon cayenne pepper
  • 1 teaspoon dried rosemary
  • 1/2 teaspoon dried sage
  • 1/4 teaspoon lemon pepper
  • 1/4 teaspoon seasoned salt
  • 1/4 teaspoon beef bouillon granules
  • 1 (3 pound) beef tri-tip roast
Instructions
1
Preheat your oven to a high temperature of 375 degrees Fahrenheit (or 190 degrees Celsius).
2
In a small bowl, combine kosher salt, black pepper, granulated garlic, onion powder, oregano, cayenne pepper, rosemary, sage, lemon pepper, seasoned salt, and beef bouillon. Whisk these ingredients together until they form a uniform blend.
3
Sprinkle this spice mixture evenly onto all surfaces of the roast, ensuring it is well-coated. Massage the spices into the meat to distribute them evenly.
4
Heat a large skillet over extremely high heat. Sear the roast in the hot skillet for 2 to 3 minutes on each side, or until it develops a rich brown color.
5
Transfer the roast to a roasting pan, with its fat side facing upwards. Cover the roasting pan with aluminum foil to prevent overcooking.
6
Place the roast in the preheated oven and cook until it reaches a desirable level of doneness, approximately 90 minutes. Use an instant-read thermometer to check the internal temperature; it should read 150 degrees Fahrenheit (or 65 degrees Celsius).
7
Once the roast is cooked, remove it from the oven and lift the foil to reveal its finished state. Tent the roast loosely with aluminum foil, allowing it to rest for 10 minutes before slicing across the grain.
