Ingredients
- 1/2 head green cabbage, cored and shredded
- 1 carrot, grated
- 1 quart boiling water
- 3 green onions, minced
- 1 cup distilled white vinegar
- 1/2 cup water
- 2 teaspoons dried oregano

Combine the shredded cabbage and grated carrot in a large bowl, then pour the boiling water over them. Let the mixture sit for 5 minutes to allow the flavors to meld, then carefully drain off any excess water.

Return the cabbage and carrot mixture to the bowl, and add a chopped green onion, a splash of vinegar, 1/2 cup of water, and some dried oregano. Use a spoon or your hands to mix everything together until it's well combined.

Cover the bowl with a lid or plastic wrap and refrigerate for 20 minutes to allow the flavors to meld together.
