Ingredients
- 1 salted (hard-cooked) duck egg, shelled
- 1 1/2 pounds ground pork
- 1 egg
- 1 tablespoon soy sauce
- 1/2 teaspoon white sugar
- 1/4 teaspoon salt
- 1 teaspoon ground black pepper
- 1 tablespoon milk
- 1/2 head broccoli, cut into florets
Instructions
1
Firstly, carefully separate the white from the yolk of a salted egg and place it in a small bowl or blend it in a food processor until well mashed. Next, divide the yolk into four equal pieces and set them aside for later use.
2
Then, combine ground pork, the mashed salted egg white, regular eggs, soy sauce, sugar, salt, and pepper in a medium-sized heat-proof bowl. Mix everything together using your hands until the mixture is well combined and has a smooth texture, thanks to the addition of milk. Allow the mixture to marinate for 15 minutes, a perfect time to prepare other dishes and start cooking rice.
3
While the meat is marinating, set aside the pieces of salted egg yolk that you will use to add flavor and texture. Use your fingers to gently push the yolk pieces into the meat, making sure they are evenly distributed. Finally, smooth out the top of the pork to create a flat and even surface.
4
Arrange broccoli florets around the outer edge of the meat, creating a visually appealing presentation. Now, place the bowl in a steamer or a large pot with about two inches of water in it. Set the steamer over medium-low heat and allow the meat to cook until it is browned throughout, taking about 30 minutes.
5
Once cooked, serve the meat with a side of rice. Be sure to ration the salted egg yolk carefully, as it is quite salty and should be consumed in small amounts. To enjoy the yolk, eat a small amount at a time with a larger bite of meat and mix it with a mouthful of rice.
