Green Salsa Pork
Ingredients
  • 1 tablespoon canola oil
  • 1 (3 pound) boneless pork loin roast
  • 11 ounces green salsa
Instructions
1
Preheat the Dutch oven over medium-high heat, adding a generous amount of oil to it.
2
Place the pork loin inside and sear for 2-3 minutes on each side, developing a golden crust.
3
Transfer the pork loin to a slow cooker and pour the salsa over it, making sure the meat is fully coated.
4
Cover the slow cooker to trap the flavors and heat.
5
Cook on Low for 5 hours, allowing the pork to become tender.
6
Using two forks, shred the pork into bite-sized pieces.
7
Combine the shredded pork with the sauce, stirring until they're evenly coated and well combined.
8
Continue cooking on Low for an additional 1-3 hours, allowing the flavors to meld together and the pork to become even more tender.
