Ingredients
- 5 cups water
- 2 teaspoons salt
- 1 (12 ounce) fresh salmon fillet
- 8 ounces smoked salmon, chopped
- 1/3 cup chopped green onion
- 2 tablespoons chopped fresh parsley
- 1 teaspoon chopped fresh tarragon, or to taste
- 7 tablespoons butter, softened
- 1/2 cup mayonnaise
- 1 tablespoon Dijon mustard
- 1 tablespoon fresh lemon juice, or to taste
- 1/2 teaspoon black pepper

Begin by heating water to its boiling point in a substantial saucepan and then add salt to the mixture. Next, place a salmon fillet into the saucepan and lower the heat to a gentle simmer. Continue cooking until the salmon reaches its just-cooked state, taking around 6 to 8 minutes. Remove the cooked salmon from the saucepan using a slotted spoon and allow it to rest for 10 minutes.

Once the salmon has cooled, take it out of its skin and place it in a large bowl. Add smoked salmon, green onion, parsley, and tarragon to the bowl with the cooled salmon.

In a separate bowl, combine butter, mayonnaise, mustard, lemon juice, and pepper. Whisk the mixture until it is smooth and free of lumps.

Add the mayonnaise mixture to the bowl containing the salmon, and gently stir until everything is well combined.

Cover the bowl with a lid or plastic wrap and refrigerate for 3 hours.

Serve the chilled salmon mixture with toasted baguette slices or crackers.
