- 1/2 cup plain dried bread crumbs
- 1 tablespoon seafood seasoning (such as Old Bay®)
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
- 8 brioche buns, split and toasted
- 2 cups fresh arugula
- 1/2 cup plain yogurt
- 2 tablespoons light mayonnaise
- 2 tablespoons finely chopped parsley
- 2 tablespoons finely chopped green onion
- 1 tablespoon fresh lemon juice
- 1/8 teaspoon salt
- 1/8 teaspoon black pepper

Prepare the salmon burgers: Cut the salmon into small, uniform cubes measuring 1/8 to 1/4 inch in size. Combine these pieces with beaten eggs, chopped parsley, green onions, lemon juice, bread crumbs, seafood seasoning, salt, and pepper in a bowl. Use your hands to thoroughly mix the ingredients together.

Divide the mixture into eight equal parts and shape each portion into a thick patty with a diameter of 3 1/2 inches. Cover the patties and refrigerate them for at least 30 minutes or up to 4 hours.

When you're ready to cook, preheat an outdoor grill over medium heat and lightly grease the grill surface with oil. Brush the patties with a thin layer of oil on both sides.

Cook the patties on the preheated grill, turning them carefully with a spatula, until they're cooked through and reach an internal temperature of 145 degrees F (63 degrees C). Use a food thermometer to check the temperature.

Prepare the sauce: In a small bowl, combine plain yogurt, mayonnaise, chopped parsley, green onions, lemon juice, salt, and pepper. Mix the ingredients together until well combined.
