  • 1 green onion, chopped

Clean and rinse clams, removing any dirt or debris. Submerge them in a large container filled with cold water for 5 minutes, allowing the clams to become more pliable. Drain the clams thoroughly.

Next, heat a large cooking vessel such as a wok or saucepan over extremely high heat. Rapidly pour in the sake, mirin, and rice wine vinegar mixture. Add the clams immediately and cover the vessel to allow them to cook until they open, typically within 3-4 minutes. Discard any clams that fail to open during this time.
