Ingredients
- 2 tablespoons all-purpose flour
- 1/4 teaspoon salt
- 1 pinch ground black pepper
- 1 egg, lightly beaten
- 3/4 cup Italian bread crumbs
- 1/2 cup grated Parmesan cheese
- 1 1/2 teaspoons rubbed sage
- 1/2 teaspoon grated lemon zest
- 2 boneless pork chops
- 1 tablespoon olive oil
- 1 tablespoon butter
Instructions
1
Preheat your oven to the highest temperature setting, which is 425 degrees F (220 degrees C).
2
Next, lightly coat the interior of a rectangular baking dish measuring 7x11 inches with a thin layer of oil.
3
Mix together flour, salt, and pepper in a shallow container. In another shallow dish, whisk the egg until it becomes smooth.
4
In a third shallow dish, combine bread crumbs, Parmesan cheese, dried sage leaves, and lemon zest.
5
Gently place a pork chop into the flour mixture, pressing it in to coat evenly. Then, shake off any excess flour that doesn't stick.
6
Dip the coated pork chop into the beaten egg, pressing it onto the egg to ensure a secure bond.
7
Using your hands, gently toss the breaded pork chop around to distribute any loose crumbs evenly.
8
Place the breaded pork chop on a plate, then repeat the breading process for the remaining pork chops.
9
Ensure that the breaded pork chops are not stacked on top of each other.
10
Heat a mixture of olive oil and butter in a large skillet over medium heat.
11
Brown the pork chops for approximately 4 minutes on each side, then transfer them to the prepared baking dish.
12
Place the baked pork chops in a preheated oven and bake until they reach an internal temperature of at least 145 degrees F (63 degrees C), or until they are no longer pink in the center.
13
Check the internal temperature of the pork chops using an instant-read thermometer inserted into the center.
